Potatoes in Italian dressing

Warm potatoes quickly absorb the delicious aroma of olives, tomatoes and olive oil. This salad can be served warm and cold.
Boil the potato pieces in a pan of boiling water for about 15 minutes or until soft. Drain, cut and put in a bowl. Finely chop the shallot. Cut tomatoes into slices and add to a potato with shallot. To make a dressing, put all the ingredients in a jar with a lid and shake thoroughly. Pour over dressing potatoes and mix. Transfer the potatoes to a dish and sprinkle with basil.
On a note
Best of all, this recipe "works" with old, starchy potatoes.It doesn�t look as beautiful as it does with a young one, but it does remarkably absorb a fragrant dressing. Use high-quality olive oil (extra virgin) - it gives a really great flavor to this salad.
