    Tasty homemade buns are a peculiar level of skill of any housewife, because what to hide, at first they are not always obtained just as airy and fragrant as we imagine them.

    With stuffing

    There are a lot of options for baking and kneading dough, you yourself know perfectly well that buns can vary greatly, depending on the composition of the filling, as well as on the dough. There are recipes, so to speak, "in haste" to quickly get out of the situation, when the guests unexpectedly arrived, there are also more complex options, where the dough should be raised several times, and the filling is prepared in advance.

    Recipe for "quick" buns on yogurt

    Let's start our experiments with quick recipes, they are simpler than the others and do not require a large number of ingredients, and, therefore, even an inexperienced hostess can cope with them.

    Sometimes it happens that a little yogurt or kefir stays at home, you don’t want to drink up, but it’s a pity to throw it away, and not necessarily, because with their help you can make delicious pastries. So, what we need:

    • yogurt - 300 g;
    • flour - 350 g;
    • sugar - 30 g;
    • baking powder - 2 tsp;
    • salt - a pinch.
    • vegetable oil - 1 tbsp. a spoon;

    Fly sifted, mixed with baking powder, salt and sugar. Separately, mix the yogurt and butter, and the flour prepared before that, we begin to pour in parts, constantly stirring the dough.After the dough is kneaded, it must be laid on a flat surface, pre-sprinkled with flour. The whole piece is divided into 8-10 equal pieces, of which we form buns.

    Prepare a baking sheet, cover it with parchment, and spread the prepared buns on top, they can be rolled in sugar beforehand. Bake buns must be in the oven, preheated to 220 °, for 25 minutes before browning.

    In such buns, you can easily add vanilla or dried fruits for taste, and if you want them not to be sweet, for example, as a basis for hamburgers, you can use seeds and herbs, for example, poppy seeds or sesame seeds.

    Cinnamon Rolls Recipe

    Who does not like tasty homemade yeast rolls? Gentle and always lush, they are strongly symbolized with tea or morning breakfast.


    And if such buns are also decorated with some stuffing, then the result is completely one hundred percent: baking with cinnamon or poppy seeds, sugar or sesame, jam or raisins, you will lick your fingers! Let's try to make one of the most popular types of baking - cinnamon and sugar buns. What we need:

    For the test:

    • milk - 150 ml;
    • flour - 320-350 g;
    • sugar - 80 g;
    • egg - 1 piece;
    • Ground cardamom - 1 teaspoon;
    • butter - 70 g;
    • dry yeast - 5 g;
    • a pinch of salt.

    For filling:

    • sugar - 1 tbsp. a spoon.
    • Cinnamon - 0.5 tbsp. spoons;
    • butter - 60 g;

    In a separate dry container, we break an egg, for kneading dough you will need only half, the rest can be drained into a small bowl for further lubrication of the buns. Yeast must be diluted in advance, for this you need three tablespoons of warm milk.

    Leave the yeast in it for 10 minutes, you need to wait until the whole mixture is slightly increased in volume. For a softer effect, we do not forget to melt the butter on the steam bath, then pour the dissolved yeast into it, pour all the remaining milk, sugar, slightly beaten half of the egg, ground cardamom, and salt.


    Flour begin to pour gradually, while kneading the dough. After that, lay it on a flat, sprinkled with flour surface, cover with a towel and give a "rest" for half an hour. Further we prepare the work surface: we fall asleep with its flour, the dough must be lightly mixed, as a result it should turn out to be very obedient and soft.Roll it into the oval layer.

    We begin to prepare the filling: in a separate container, melt sugar with butter, add cinnamon to the total mass. Culinary brush apply the prepared stuffing on the rolled dough, then gently fold it into a roll.

    Then cut it into small pieces, put them on a prepared baking sheet and leave to stand for another hour. After the time has expired, bake them in an oven heated to 230 ° for about 8 minutes.

    Curd buns

    Sweet cottage cheese buns are the perfect treat for the whole family, which is ideal for festive tea parties. What we need:


    • flour - 600 g;
    • butter - 80-100 g;
    • chicken eggs - 3 pcs .;
    • vanilla sugar - 1 package;
    • sugar - 100 g;
    • dry yeast - 2 tsp;
    • a pinch of salt.

    • cottage cheese - 450 g;
    • egg - 1 piece;
    • raisins - 100 g;
    • vanilla sugar.

    First, let's take a test: milk should be slightly warmed, but do not bring to a boil. Add to it the yeast, sugar and salt, stir everything until you get a homogeneous mass without lumps and inclusions. Then add half of the whole prepared meal to the total mass, continue to mix, so that all the formed lumps disperse.

    All contents set aside for 40 minutes. In a separate container, mix slightly beaten eggs and sugar. Butter must be melted beforehand, cool a little and then combined with the beaten egg mass.

    Now it can be combined with the milk brew that was set aside earlier (it should already begin to bubble), then gradually pour all the flour, continue kneading the dough. At the end we remove the bowl with him for 90 minutes to lift.

    We will deal with the filling: curd cheese with the egg, add plain and vanilla sugar, continue to grind until a homogeneous mass. At the end add the raisins, remove the stuffing in the fridge for half an hour. Then we return to the test: it needs to be kneaded, divided into 25 pieces.

    Each piece is unfolded in the form of cakes, in the middle lay out a little filling, and then we fold the edges back, in the form of a donut. We spread the buns on a baking sheet, wait about 20 minutes for them to rise, then grease them with whipped yolk and bake in an oven preheated at 180 ° for 30 minutes.
