Chinese five-spice powder adds an intriguing hint of licorice to rich salmon.

Ingredients
piece salmon fillet
2 tsp. Chinese five-spice powder
1 tsp. all-purpose flour
1/2 tsp.
1/4 tsp. cracked black pepper
2 tsp. vegetable oil
Directions
  1. With tweezers, remove any bones from salmon fillets. On waxed paper, combine five-spice powder, flour, salt, and pepper. Use to rub on both sides of fillets.
  2. In nonstick 10-inch skillet, heat oil over medium heat until hot. Add salmon; cook until just opaque throughout, 4 to 5 minutes per side. Makes 4 main-dish servings.
